Round Rock Donuts in beer? One local brewery has made that happen


Brewers have been adding all manner of edible ingredients into their beers — everything from bread to blueberries and even ramen noodles. Now, a Pflugerville brewery is satisfying our collective sweet tooth with maybe the best pairing of them all: doughnuts. 

But not just any doughnuts. The perfect confections that are Round Rock Donuts, a shop that Buzzfeed declared the best in Texas last year. 

Two types of doughnuts from Round Rock Donuts went into a pair of beers at Idle Vine Brewery, which opened in January as one of Pflugerville’s only breweries. The collaboration had apparently been in the works for awhile.

“We sat down with our friends at Round Rock Donuts a few months ago to discuss creating a beer that would feature their world famous donuts as not only a thoughtful pairing, but as an actual ingredient. Ultimately we couldn't settle on just one flavor, so we chose two,” according to Idle Vine Brewery’s Facebook post about the beers.

These sweet, sweet suds will debut on tap at the brewery on Nov. 11, when Round Rock Donuts will be on-site, starting at noon, so you can pair the beers with the donuts that went into them.

Here are the two beers to expect.

  • The Donut Dunker, a 5.5 percent ABV dessert stout. “Heaps of Round Rock Donut chocolate frosted donuts were mixed right in with our grain to create something that is truly a liquid dessert,” according to Idle Vine.
  • I Donut Care, a 7 percent lemon IPA. “We had so much fun with Donut Dunker we decided to do it again,” Idle Vine said in the Facebook post. “Lemon-filled donuts, Lemondrop hops, and lemon zest all introduce an incredibly citrusy aroma and flavor to this softly bittered IPA.” It might seem odd to make an IPA with donuts oozing with lemon filling, but guess what? Idle Vine head brewer Scott Ciampa said this: “I donut care.”
