Another restaurant commits to Plaza Saltillo; just 1 spot left

Another restaurant has snagged space at Plaza Saltillo.

Snooze, a Denver-based, brunch-centric chain with two locations already in Austin, confirmed Wednesday that it has committed to the redevelopment project underway on the city’s east side.

“The Plaza Saltillo area is a very similar neighborhood to our original location in the Ballpark neighborhood in Denver, so it already feels like home,” Snooze CEO David Birzon told the American-Statesman. “We are inspired and excited by the growing restaurant scene in this area and the eclectic nature of the neighborhood.”

The other two Snooze locations are at 1700 S. Lamar Blvd. in South Austin and 3800 N. Lamar Blvd. in Central Austin.

“East Austin is an incredibly fun and vibrant community, and we fell in love with the neighborhood and the vibe,” Birzon said. “The people of Austin have been extremely welcoming and we are excited to bring Snooze to a new community.”

Other bars and restaurants that have committed to the project, which is being overseen by Austin-based Endeavor Real Estate Group, include Dolce Neve gelato shop, Tarka Indian Kitchen, Epoch Coffee, Stout Burgers & Beers and Barcelona, a wine and tapas bar.

The Ginger Man, a popular Warehouse District bar, will relocate to Plaza Saltillo, as well.

Interest has been high, according to Endeavor’s Adam Zimel and Michele Gary.

“Snooze is one of many restaurant groups that kept their eye on East Austin, just waiting for the perfect site that fired on all cylinders and complimented their expansion objectives,” Gary said. “Our vision for Plaza Saltillo is to cultivate the ‘best of’ in restaurants, entertainment and retail and to truly create a one-of-a-kind experience in Austin.”

Just one restaurant spot remains in the multiblock redevelopment near Interstate 35 and East Fifth Street, according to Gary.

“We’ve saved the best for last,” she said. “The square footage can range from 4,000 to 5,900 square feet endcap and has an incredible patio opportunity – sure to be one of Austin’s largest – that will spill into the bustling pedestrian paseo overlooking the 1-acre public park. We know restaurateurs and Austinites love outdoor patios, so we’re thrilled to be collaborating with each tenant to create dynamic outdoor areas.”

Snooze anticipates opening in 2019, along with most of the other tenants in the project, Birzon said.

“This location will be designed similarly to our current restaurants,” he said. “We create a bright, vibrant and fun atmosphere with a ‘Jetsons’ meets ‘Happy Days’ sort of vibe. This location, like our other restaurants, will also have a beautiful patio to enjoy brunch outside.”
