The residents at Elgin Nursing and Rehabilitation Center can once again have their eggs cooked with runny yolks, but it has taken more than three years of legal wrangling and a ruling by the U.S. Court of Appeals for the 5th Circuit.
In an opinion filed this spring, a three-judge panel overturned a $5,000 fine against the 120-bed Elgin facility for serving undercooked eggs.
