I asked three Austin chefs about Americans’ love of hamburgers and what makes a great burger.
Shawn Cirkiel of Parkside (and the Backspace and Olive & June) calls burgers “the perfect meal — meat, vegetables, dairy, and bread. You can carry it anywhere, cook it anywhere, make it cheap, make it expensive … essentially an endless supply of creativity.” Cirkiel said there are three things to keep in mind when making a burger:
