New year, new dishes to cook at home


We hope your New Year’s was filled with lots of good luck and hopeful thoughts about the year ahead. On Instagram, we enjoyed seeing how you rang in 2017 with delicious food through the #Austin360Cooks hashtag.

Last week, Elizabeth Lindemann, who writes the blog Bowl of Delicious (@bowlofdelicious, bowlofdelicious.com), shared her photo and recipe for a paleo chicken salad that’s both mayo-free and dairy-free. It was the most popular recipe on her site last year and is a great fit if you’re doing the Whole30, a 30-day paleo diet from Melissa and Dallas Hartwig.

Lindemann suggests cooking the chicken — a whole chicken or bone-in, skin-on breasts — in a slow cooker with a little water for about 6 hours on low. When you’re storing the salad, press a layer of plastic wrap on top to reduce any browning of the avocado.
